Cajun Chicken and Spinach Salad

Ingredients:

Chicken strips (or chicken breast cut up into strips) Walnuts Fetta Spinach Leaves Walnuts Snow Peas

Method:

I like to steam my chicken and I’m lucky enough to have a Thermomix so I lay them out in the Varoma tray and sprinkle with the Cajun spice. I leave some plain for the kids. This can take 5-10 mins depending on how thick your pieces are. You can also pan fry in a little extra virgin olive oil if you don’t have a steamer. Pan fry the walnuts in a little oil for a few moments until browned (not too high a heat). When done set aside to drain on some absorbant paper. In a bowl add some spinach, fetta (chopped or crumbled), and snow peas (cut if desired). When the chicken is cooked through (no more pink) just place on top of the salad. Notes: I personally don’t like to use salad dressings too much as this is where most of the calories hide. I find with the juice from the chicken and the cajun flavour, it isn’t required anyway.
