Chilli Con Carne

Serves 4
Ingredients:
1 tablespoon peanut oil
1 brown onion, chopped
2 garlic cloves, chopped
1 tablespoon ground cumin
1 tablespoon ground coriander
2 teaspoons cayenne pepper (optional)
600g lean beef mince (organic if possible)
400g crushed tomatos (I like to use from fresh, I cook down in the Thermomix) can use 1 can of tomatoes if desired.
2 tablespoons tomato paste
1 x 300g can red kidney beans, drained, rinsed
Extras…
1 x 300mL light sour cream (only use a small amount!)
Guacamole (I just use, Avacado, 1 Tbs sour cream and 1Tbs Sweet Chilli) Can add Chopped Red Onion and Chopped Tomatoes if desired.
Corn Chips (organic if possible) or Corn Tortilla’s or Brown Rice
Grated Cheese (just a light sprinkling)
Chopped Tomatoes
Diced Jalapenos
Method:
Heat Oil over medium-high heat and add onion and garlic. Cook to soften. Add Cumin, Coriander and Cayenne pepper and cook – 1 minute. Add Mince and cook until brown. Stir in tomato, tomato paste and kidney beans. Reduce heat and simmer for 10 mins to thicken the sauce. Stir occasionally. Serve with your choice of Gucamole, Cheese, Corn chips (or Tortillas), diced tomatoes, sour cream OR just on a bed of brown rice.
Note: I always make a large batch and freeze in meal sized containers. So easy to reheat after a long day!
