Lamb with Roasted Balsamic Pumpkin, Fetta, Spinach and Walnuts

Serves 4.
400g pumpkin 1Tb brown sugar 2Tb balsamic vinegar 1Tb extra Virgin olive oil
Cut up pumpkin into bite sized pieces Put into oven proof dish Sprinkle over oil, vinegar and sugar Mix to coat.
Put in oven @ 200*C and cook for 15-20mins
I love to use this with a bunch of spinach, some feta and cut up walnuts. Top with some pan fried lamb blackstrap. No need for any dressing as its all on the pumpkin.
Note: can prepare the pumpkin the day before and leave in the fridge and just pop it in the oven when u get home! A really quick and easy and of course healthy meal for all the family.
