Mel's Surprise Rice

Serves 4.

Ingredients:

1 Onion – finely diced 1/2 red capsicum – diced 4 rashers of short cut bacon (I only ever buy short cut) 1/2 Zucchini – sliced thick and then quartered Splash of Extra Virgin Olive Oil 2 Cups cooked Basmati or brown rice (always cook it a day or two before otherwise it turns to mush) 2Tbs Worcestershire Sauce 1Tb Soy Sauce 2Tbs Sweet Chilli Sauce 1 cup frozen peas

Method:

Add Oil to pan, add onions. Cook until brown and soft. Add bacon and cook. Add Zucchini and capsicum. Cook for a few mins to soften. At this point I then added the soy sauce, Sweet chilli and Worcestershire and stirred through. The peas went straight in from the freezer and just heat through. Next comes the rice, just mix it all in and heat it through. Easy as that. Takes no time at all and is so easy and delicious. Notes: * It’s really important to pre-cook the rice, don’t just cook it before you make this. It is also better to be cold so 1 day before is just perfect! * I always cook more rice than is needed and then keep it in the freezer so I have it on hand for a quick easy meal. * You can add any side serving to this, I had fillet steak on hand that night – Mmmmmm * My favourite ingredient is eggs in this but I completely FORGOT! Just pan fry them and crack the yolk and mix so the yolk goes through the white. Flip them to ensure they are cooked through then slice up and add to the Fried rice. My husband was very confused as to where they were in this dish! He knows I love my eggs. I whipped this up so quickly though as we were heading out, so just plain forgot!
