Avocado & Coriander Salad Parcels

Cos lettuce
medium tomatoes
1/2 avocado
Lebanese cucumbr
Small red onion
1/4 cup chopped fresh coriander
1/4 cup lime juice
2 gloves garlic crushed.
Mix in a bowl and add to cos lettuce leaves, mix juice, garlic and pour over.
Serve as a side salad with a serving of lean protein like grilled chicken or fish and your low GI carbohydrate of choice (preferably gluten free!)
