Crunchy Apple and Walnut Salad

2 apples thinly sliced
2 celery sticks sliced
Roasted almonds coarsely chopped
1/4 cup lemon juice
1/2 cup Greek Yoghurt
Place in a large bowl and add lemon juice and yoghurt - toss gently to combine.
Serve with a serving of lean protein like grilled chicken or fish and a 1 cup serving of low GI (preferably gluten free) carbohydrate like wild or brown rice, sweet potato or quinoa.
