Banana Bread

Ingredients:

5-6 over ripe bananas (depending on size), mashed 220g butter 300g brown sugar 2 tsp vanilla extract 4 eggs 100g maple syrup 255g Plain Flour 255g Wholemeal Plain Flour 2 tsp bicarbonate soda 2 tsp baking powder 2 tsp ground cinnamon 2Tbs Chia seeds (if you want – not necessary just really good for you) extras – can add Chopped walnuts if desired extras – for an extra treat, add dark chocolate bits (lower sugar/ content if adding this)

Method:

Pre-heat the oven to 160 degrees celsius Cream butter, sugar and vanilla togeteher. Add eggs one at a time and mix. Add the banana and the maple syrup and combine. Add all the dry ingredients and fold together. Pour the mixture into a greased baking tin and bake for 1 hour, or until a skewer/knife is placed in the middle and pulled out clean.

Serve with butter and enjoy!
